PHP would be awesome but might involve a fair bit of jiggery pokery with the Zend Engine and the new Zend Engine 2.

If you reckon Javascript is going to be the simplest to learn from a PHP background, then that gets my vote

Oh and for the sake of clarity about people doubting the ability to make non web based programs with php, please read the website, it will teach you a lot you obviously didn't know about PHP.
